Alyn Williams is a born and bred Londoner. His culinary journey started at home where his father both grew vegetables and cooked with passion. This passion was passed on to Alyn at a tender age and has never left him. Alyn opened his eponymous restaurant, ‘Alyn Williams at The Westbury' in November 2011. Prior to that he worked with some of the biggest names in the business, including Gordon Ramsay and Marcus Wareing for whom he was head chef at his two Michelin star establishment. 2012 saw his light progressive style of cooking winning him the coveted ‘National Chef of the Year' title, along with his first Michelin Star. He has since been awarded four AA rosettes.
Head Chef at Alyn Williams at The Westbury is 25-year-old Essex-born Tom Booton. Tom's career began at Le Talbooth, Dedham when he was just 15. Starting out as a trainee, Tom began right at the bottom but quickly showed his potential and began to rise through the ranks. During his time at Le Talbooth whilst working as a trainee commis chef, Tom won ‘Chef of the Future' at the Essex Food & Drink Awards, beating four finalists from across the county to the title. In 2013, after five years learning the ropes at Le Talbooth, Tom moved to London. This is where he first met and worked for Alyn Williams. After a year with Alyn, Tom moved to L'Autre Pied, Marylebone under Andy Mcfadden. Tom remained here for two years, leaving as Sous Chef to go travelling. Whilst away, he spent time in various restaurants in New York, Copenhagen and Iceland. In February 2017, Tom moved back to Alyn Williams at The Westbury as Head Chef.
Coming from a restaurant general management background, Chris has over the past 15 years been fortunate enough to work with some of London's finest operators such as Heston Blumenthal, Gordon Ramsay and Jason Atherton. Using a combination of experience, classic service skills and traditional British hospitality to help unify and lead the Front Of House team to give guests the most memorable experience possible.
Originally from South Africa, Jacinta Gillespie began her London career in 2005 working as a receptionist at Gordon Ramsay's Boxwood Café, at The Berkeley Hotel in Knightsbridge. Only intending to stay for two years, her skills were quickly acknowledged by Stuart Gillies who offered her a work permit and the position of Head Receptionist. She stayed with Boxwood Café until it's closure in April of 2010. From there, she joined the team at Koffmann's at The Berkeley Hotel where she worked closely with Mr. Pierre Koffmann. Moving from strength to strength, she worked her way to a position as a Private Events and Guest Relations Manager. She stayed with Koffmann's until it's closure in December of 2016. Jacinta joined Alyn Williams at The Westbury in February 2017 as our Reservations Manager.
